Beef with Orange Sauce













Ingredients:
  • 2 1/2 pounds beef eye round, trimmed of fat 
  • 1/2 gallon (64 oz) orange juice 
  • 2 slices bacon, chopped 
  • 1 tablespoon oil 
  • 2 tablespoons cornstarch 
  • 1/2 teaspoon salt 
  • 1 tablespoon sugar 

For the meat filling: 
  • 6 pitted prunes 
  • 6 slices bacon, chopped

Preparation: 
  1. Make a deep hole in the middle of the meat and fill with chopped prunes and bacon. 
  2. In a skillet, saute the meat over medium heat for sealing and prevent the filling fall out. 
  3. Tip the meat into a large pot and pour the orange juice, sugar and salt. Cook over medium heat for 1 hour and 55 minutes. Then, remove from heat and cut into slices.
  4. In a small skillet, saute the remaining 2 slices of bacon and set aside. 
  5. Remove some orange juice and mix well with the cornstarch, pour into the saucepan and continue cooking over medium heat for 5 minutes or until sauce thickens. Serve hot with sauce and fried bacon on top.

Orange tea with ginger and cinnamon
























Ingredients:
  • 5 cups water  
  • 1 (3-inch) cinnamon stick
  • 1 teaspoon ground ginger
  • The peel of one orange, without the white part 
  • 4 teaspoons of sugar per cup
  
Preparation:
  1. In a small saucepan boil over high heat all ingredients for 20 minutes.
  2. Strain and serve.

Chocolate Cookies


Ingredients:
  • 1/2 cup sugar
  • 3/4 cup (1-1/2 stick) butter, at room temperature
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups all-purpose-flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Sprinkles to decorate
  • Chocolate Syrup
  • 1 Baking Sheet

Preparation: 
  1. Put the flour, cocoa, baking soda and salt into a bowl and mix. 
  2. In an electric mixer beat at high speed the sugar and butter for 2 minutes; add egg and vanilla, continue beating for 1 minute. Then, mix in the dry ingredients, beating at low speed for 3 minutes.
  3. Scoop out 12 equal-sized mounds on an ungreased baking sheet about 6cm apart. Do not flatten them. 
  4. Bake at 350 ° F. for 10 minutes, testing with a cake tester to make sure it comes out semi-clean and not wet with the cookie batter. 
  5. Put them in a plate and cool for 5 minutes.
  6. Pour chocolate syrup and sprinkles on top of each cookie.

Preparation Time: 20 minutes 
Oven time: 30 minutes (12 cookies per sheet)

Rice Pudding


Ingredients:
  •     1 cup white rice, uncooked
  •     1 1/2 cups water 
  •     8 cups whole milk 
  •     1 (3-inch) cinnamon stick
  •     1 1/2 cups sugar 
  •     1/2 teaspoon salt 
  •     1/2 teaspoon ground cinnamon
  •     1 lime peel
  •     Ground cinnamon, for dusting
Preparation:
  1. Leave the rice in water for 2 hours and drain.
  2. Bring 1 1/2 cups of water to medium-high heat in a medium size heavy saucepan.
  3. When the water boils, add the rice moving to prevent sticking. 
  4. Let water dries, add gradually the milk and cinnamon stick. Move frequently and cook for 20 minutes.Then, add the sugar, salt, cinnamon and lime peel.
  5. Continue cooking, stirring constantly, until the mixture is thick, about 30 minutes. 
  6. Transfer the pudding to a serving bowl. Sprinkle  ground cinnamon on top and serve.

Strawberry Banana Bread





Ingredients:

For the Bread
  •     2 cups of all-purpose flour
  •     3/4 cup banana smashed (2 bananas)
  •     1 cup of strawberries, washed and chopped
  •     1 cup granulated sugar
  •     1 tablespoon of melted butter
  •     1 tablespoon oil
  •     1/2 teaspoon baking soda
  •     1/2 teaspoon vanilla extract
  •     1/2 teaspoon ground cinnamon
  •     2 teaspoons baking powder
  •     1 egg, beaten
  •     Pinch of ground nutmeg
  •     4 1/2" width x 8 1/2" long loaf pan

For the Strawberries Syrup

  • 1 1/2 cup of strawberries, washed and chopped
  • 1/4 cup water
  • 1/4 cup granuladed sugar


Preparation:
For the Strawberries Syrup 

  1. Place in a saucepan at low heat the strawberries, sugar and water.  
  2. Cook for 20 minutes.
For the Bread

  1. In a bowl, mix flour, sugar, baking powder, baking soda, ground cinnamon and ground nutmeg.
  2. In other bowl, mix the banana smashed, egg beaten, melted butter, oil and vanilla. Then, add this mixture to the other.
  3. Mix well, add the strawberries.
  4. Pour mixture into a buttered pan.  Bake for 1 hour at 350° F. (I had to bake the mixture for 50 minutes at 300° F. because my oven usually is too hot).
  5. Remove from pan, cool for 20 minutes. 
  6. Place on top the strawberries syrup.

Coffee Flan






 
Ingredients:

Flan:
  • 1 (14 ounces) can sweetened condensed milk 
  • 1 (11 ounces) can evaporated milk
  • 1/2 cup brewed coffee
  • 2 tablespoons sugar
  • 4 eggs
  • 1/4 teaspoon salt
  • 2 teaspoons white vanilla extract
  • A flan pan
Caramel:
  • 1 cup sugar
  • 1/4 cup water 

Preparation:

Caramel 
  1. Make caramel by combining sugar and water in the pan and cooking over moderate heat swirling occasionally until color begins to turn golden.
  2. Turn heat to low and continue cooking and swirling constantly until color is dark brown and mixture smells of caramel.  
Flan 
  1. Place all the ingredients in the blender and blend for a minute.
  2. Strain the mixture in the caramelized flan pan.
  3. Cook over bain marie with boiling water at medium heat for 1 hour and 40 minutes
  4. Chill in refrigerator for 1 hour. Run a knife along the flan edges and invert onto serving plate. Serve. 
Preparation Time: 25 minutes 
Cooking Time: 1 hour 40 minutes

    Sour Orange Juice



      
    Ingredients:

    • 5 cups water
    • 1/2 cup white sugar + 3 tablespoon
    • 1 cup sour oranges juice (4 sour oranges))

    Preparation:


    1. Mix all the ingredientes. 
    2. Serve.

      Easy to Make Banana Bread












         Ingredients:
        •     2 cups of all-purpose flour
        •     1 cup banana smashed (3 or 4 ripe bananas)
        •     2 tablespoons of melted butter
        •     1/2 teaspoon baking soda
        •     3 teaspoons baking powder
        •     1 egg, beaten
        •     1/2 teaspoon vanilla extract
        •     1/2 teaspoon ground cinnamon
        •     3/4 cup sugar
        •     Pinch of ground nutmeg
        •     1/2 cup chopped walnuts or raisins (optional)
        •     4 1/2" width x 8 1/2" long loaf pan

        Preparation:

        1. Preheat the oven to 350°F (175°C).
        2. In a bowl, mix flour, sugar, baking powder, baking soda, ground cinnamon and ground nutmeg.
        3. In other bowl, mix the banana smashed, egg beaten, melted butter and vanilla. Then, add this mixture to the other.
        4. Pour mixture into a buttered pan.  Bake for one hour. Remove from pan and slice to serve.
        Preparation Time: 20 minutes
        Baking Time: 1 hour
