- 2 cups flour
 - 2 teaspoons ground cinnamon
 - 1 teaspoon baking powder
 - 1 teaspoon baking soda
 - 1/4 teaspoon ground nutmeg
 - 1/4 teaspoon ground ginger
 - 1/2 teaspoon salt
 - 4 eggs
 - 2 cups brown sugar
 - 1 cup canola oil
 - 2 cups shredded carrots
 - 1/2 cup pineapple mermelade
 - 2 (1 oz) raisins packages
 - 2 (12 cups) muffin pans
 
Preparation:
- Mix flour, cinnamon, baking powder, baking soda, nutmeg, ginger and salt.
 - In another bowl, beat eggs, add sugar, oil, carrots, pineapple mermelade and raisins.
 - Grease the muffin pans and place the mixture. Bake at 350 F for 15 or 20 minutes.

Oven Time: 15 to 20 minutes
