- 1 cup white rice, uncooked
- 1 1/2 cups water
- 8 cups whole milk
- 1 (3-inch) cinnamon stick
- 1 1/2 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 lime peel
- Ground cinnamon, for dusting
- Leave the rice in water for 2 hours and drain.
- Bring 1 1/2 cups of water to medium-high heat in a medium size heavy saucepan.
- When the water boils, add the rice moving to prevent sticking.
- Let water dries, add gradually the milk and cinnamon stick. Move frequently and cook for 20 minutes.Then, add the sugar, salt, cinnamon and lime peel.
- Continue cooking, stirring constantly, until the mixture is thick, about 30 minutes.
- Transfer the pudding to a serving bowl. Sprinkle ground cinnamon on top and serve.
