Papaya in Syrup


Ingredients:
  • 4 cups papaya (almost ripe) peeled and chopped
  • 1 cup water
  • 1 cup of sugar (*)
  • 1 large cinnamon stick
Preparation:
  1. In a heavy-bottomed pot, cook over medium high heat, water, sugar and cinnamon and cook a thick syrup. Then, add the pieces of papaya and cook over medium high heat for 10 minutes.
  2. Remove the chopped papaya and place in a container (I used a glass bottle), then boil the syrup and cook five minutes more, add it to the chopped pieces of papaya. Let cool and store in the refrigerator.

(*)  I made this recipe with brown sugar. If you want it more sweeter, you must use white sugar.
